Gluten Free Granola #1
5 cups GF Oats (Bob's Red Mill GF Oats)
2 cups coarsely chopped almonds
1 1/2 cups pumpkin seeds
3/4 cup sesame seeds (I didn't use these)
2 teaspoons cinnamon
1 tablespoon thinly shredded ginger
1 teaspoon kosher salt
2 - 2 1/2 cups mixed dried fruit, chopped up (I used sour cherry, apricot, golden raisins)
3/4 cup maple agave
honey (I used a good drizzling all over nearly finished granola)
2 tablespoons canola/vegetable oil (I used Olive Oil)
Preheat oven to 350
Mix together the oats, almonds, pumpkin seeds and sesame seeds. Make sure to use a roasting pan if you have one as it's easier to mix the granola mounds. Sprinkle the cinnamon, ginger and salt over top and stir.
Add fruit and stir.
Drizzle the maple agave over the entire surface of the oats then repeat with the oil. Stir it all up until everything is pretty evenly coated. Oven time.
Bake for 12 minutes then take out to stir, put back in another 12 and repeat until it's nearly the crunchy texture you're looking for. At that point, take your honey and drizzle, stir, drizzle stir then put back in the oven a few minutes then take out when it's all golden brown and crunchy. (I had to do this process at least 4 times in my oven)
Let it cool and enjoy!
